Locally grown Kabocha squash is the base for these delicious pies. Unlike traditional pumpkin, which lacks flavor and body, kabocha produces a rich, deep orange flash that is high in starch and low in water content. This provides a perfect start for the addition of whole eggs, brown sugar, spices and sweetened condensed milk to create a rich and delicious filling. Instead of pie dough the crust is made with our chocolate-gingerbread cookie dough made with freshly ground spices. All of this deliciousness is topped with our whiskey-kissed caramel sauce and lightly toasted pumpkin seeds.
